Chicken Enchiladas

Got the recipe from a friend's mother then adapted it to my taste. What you get is a flavorful authentic Mexican dish that will "wow" your dinner guests.
Recipe will make fill up 2 large casserole dishes. I usually will cook 1 for that night and freeze the other for later.

Cooking Instructions

Preheat oven to 400 •

Spray a large casserole dish (or 2 small ones) with cooking spray.

Pour enchilada sauce into a round container or flat bowl.
- 4
Fry each tortilla individually till semi crisp.

Then dip the tortilla in the enchilada sauce and transfer to the prepared casserole dish.

Fill tortilla with some chicken, cheese and onion. Fold tortilla over to fold, rolling enchilada so the "seem" is on the bottom of the dish.

Repeat process till all tortillas are in the casserole dish.

Sprinkle remaining cheese over enchiladas and bake for 15-20 minutes.

Serve hot with sour cream. Enjoy 😊

This is a super forgiving recipe. Add more of what you like and don't add what you don't like! It is also very heavy. When topped with sour cream and avacado, and made with the listed ingredients, one enchilada is roughly 720 calories. Substitute chicken for cooked beef, or more cheese (if you don't want meat).
