Chorizo Quesadillas
My nephews' favorite!!!!
Steps
- 1
Cut bacon/ham into small pieces (about 1/2) and hot dogs into 4s (triangle pieces)
- 2
Cut onion and pepper into small square pieces
- 3
Take chorizo out of packing and place in hot skillet; add two table spoons of oil. Cook at medium temperature
- 4
Once chorizo is almost fully cooked (not burned), add onion, and jalapeño
- 5
When onion turns a clear color, add ham and hot dogs
- 6
Mix, add about 1/4 cup of water and bring to boil
- 7
Lower heat, cover, and cook for 5 minutes
- 8
Once ready, set aside
- 9
Heat flour or corn tortillas just enough to soften (I prefer flour)
- 10
Add cheese and chorizo mix
- 11
Fold, turn occasionally until crisp or leave tortilla soft
- 12
Enjoy!! (Taste great without jalapeños, and if you don't eat pork, you can use beef chorizo and turkey in place of ham)
