In a skillet with olive oil, brown the seasoned pork ribs. Once they are golden, add half the white wine, stir for a few minutes, then remove from heat.

In the same skillet, add the vegetables (except the potatoes) and sauté briefly. Add the spices and the rest of the wine. Let the alcohol cook off a bit.

Transfer the pork ribs and vegetables to the slow cooker. Add the water or about a cup of beer, and set to cook on high for 4 hours.

After 4 hours, peel and roughly chop the potato into chunks (cut almost through, then break apart to release more starch into the stew). Add the potatoes, making sure they are partially submerged, and cook for 2 more hours.
