Ingredients

  • 1 cupshoots
  • 1/4 cupred pepper, cubed
  • 1/2a mango, cubed
  • 1/2a nectarine, cubed
  • 1/2a peach, cubed
  • 1/2 tspfresh ginger, chopped
  • 1/2a jalapeño pepper, chopped
  • Lemon juice
  • Fresh cilantro
  • 1 tbspolive oil
  • 2tofu patties

  1. 1

    In a mason jar add fruits and jalapeño, ginger, lemon juice and olive oil. Shake well.

    Cook tofu according to package. I simply heat mine up on a stove top.

    On a plate place shoots and red pepper, cooked tofu. Then top with mango salsa and cilantro !

    Oh so tasty!
