Khaman - the world famous snack from Gujarat is given a twist by marinating in schezwan tandoori mix and roasted in tadka.
Steps

In a bowl take 1 1/2 cup of water. Add citric acid and sugar. Mix well till both dissolves. Add salt and turmeric. Mix well.

Add besan to it. Add chilli paste. Mix well. Add soda bi carbon with 1 tbsp water. Mix it nicely in one direction only.

Grease dish nicely. Add batter to it. Steam it for 10 minutes on semi high flame and 10 minutes on medium flame.

Let it cool nicely. Cut it into equal size square pieces.

Take chilli, salt, turmeric, curd, sugar and schezwan chutney in a bowl. Mix it nicely.

In a pan take oil. Add mustard seeds. Once splutters dip Khaman on all sides in marinate and roast it in Kadai. Roast on all sides.

Tandoori schezwan Khaman is ready to serve. Enjoy with cup of tea or coffee.
