I LOVE dark chocolate but I can never find the just-right tasting dark chocolate that's not too greasy or too rich. I'm picky. This is what I came up with.
My Chocolate Sauce
I LOVE dark chocolate but I can never find the just-right tasting dark chocolate that's not too greasy or too rich. I'm picky. This is what I came up with.
Steps

Melt the butter and sugars in a 3 c saucepan on medium high heat until they are ALL COMPLETELY liquid. Stir frequently with a whisk.

Once small bubbles begin to appear, add the cocoa all at once. Keep whisking at a steady pace until the sauce begins to take on a smooth and shiny appearance. Keep whisking until the small bubbles don't disappear. Turn off the heat. Let cool.

Add to the bottom or the top of ice cream, place a small tsp on top of each Flourless Peanut Butter Cookie, etc.
