Steps

Dissolve salt and tender quick in water, in an extra large pot or crock. Add liquid smoke.

Add rinsed, defrosted turkey.

Soak 40 hours

During the 40 hours of soaking, turn the turkey in the morning and night to ensure even soaking.

Rinse turkey, blot dry

Drizzle turkey with Olive Oil.

I follow directuons according to the weber grilling. They have a wonderful blog that is titled, how to rotisserie a turkey.

For a 14 pound turkey, figure about 2.5 hours of grilling, when the deepest part of the thigh reads 170 F with an instant read thermometer.

When turkey is done, place in a roasting pan and cover with tin foil. Let the turkey rest for 10-15 minutes before carving.

For oven cooking, do steps 1-6. Heat oven to 350°. Put turkey breast side down in roasting pan with a rack. Bake for 1 hour at 350. Then cover turkey with tinfoil, bake for 7 hours. Check temperature, breast should read 165°. If not bake a other 45 min and check again. Once temp is reached, remove turkey from oven, let sit covered for 30 minutes.
