Pork loin with mushroom sauce

Fry onions, carrots and celery in oil in a deep pan. After a few mins, add mushrooms. Cook for 2-3 mins. Then add pork and brown on both sides, add wine and let it evaporate

Add milk to pan. Bring gently to the boil, cover and simmer on lowest heat for 2 hours turning every now and again. After 2 hours, remove meat and keep warm

Using a hand blender, whizz up the sauce and reduce on high for about 5 mins while meat is resting. Slice meat and serve with sauce on top with any veg you like :)
