Line the bottom of the baking sheet with aluminum foil.

Spread a layer of salt (about 1/4 inch thick) over the foil and sprinkle lightly with water to help it stick together.

Place a tablespoon of butter and the juice of the lemon inside the fish cavity.

Lay the fish on top of the salt bed.

Cover the fish with salt, starting from the center and working out to the sides.

Continue until the fish is completely covered with salt.

Fold the edges of the foil up to help contain any liquids.

Bake in the oven for about 30–40 minutes.

When done, the salt will form a hard crust.

Let it cool, then break the crust with a mallet. Remove the fish meat and discard the bones.

Enjoy in tacos, stews, or as you like.

Note: The fish I used is called 'Cochinilla' in Mexico.
