Ingredients

  1. 80-100 gramsdried red chili peppers
  2. 15shallots
  3. 2 headsThai garlic
  4. 100 gramscooked fish meat
  5. 1 tablespoonshrimp paste
  6. 4-5 tablespoonstamarind juice
  7. 1 tablespoonpalm sugar
  8. 2-3 tablespoonsfish sauce
  9. 1 tablespoonvegetable oil
  10. Note: All ingredients can be adjusted to taste if you prefer your own flavor profile

    Remove the stems from the chili peppers and roast them until slightly charred.

  2. 2

    Boil fresh fish with a little salt until cooked, then remove the meat. (Catfish is used here for its rich flavor.)

  3. 3

    Grill the shrimp paste over a fire until fragrant. You can wrap it in foil or banana leaves; banana leaves add more aroma.

  4. 4

    Roast the shallots and garlic, sprinkling with a little water to cook quickly. Once cooked, roast until the skin is slightly charred for added fragrance.

    Pound the chili peppers until almost smooth, or to your liking.

  6. 6

    Add the shallots and garlic and pound until smooth.

  7. 7

    Add the shrimp paste and pound until well combined.

  8. 8

    Add the fish meat and pound until smooth and well mixed.

  9. 9

    Spoon the Nam Prik into a pan, add the oil, and rinse the mortar with a little water, adding it to the pan as well.

  10. 10

    Stir-fry until fragrant and season to taste. Cook until the mixture is dry to your liking, then taste and adjust as needed.

    To store, let the Nam Prik cool before transferring to a jar.*

    Boil room temperature duck eggs in boiling water for 7 minutes, then let them sit for 4-5 minutes before placing in cold water. This will yield a soft yolk. For a runnier yolk, place in cold water immediately after removing from hot water.
