Vermicelli kheer or seviyan ki kheer

Steps

Heat 1 tbsp ghee in a heavy bottom pan.Add 3 lavang.Fry it for 2-3 seconds.

Add the broken seviyan. Stir &continuously roast seviyan on a low to medium-low flame.Roast till the sevian strands turn golden brown

Reduce the flame to it's lowest &slowly pour milk in the pan.Mix it well, simmer milk on a low to medium-low flame.Stir ocassionally so that milk does not stick to pan.

Let the milk come to boil.After boiling add sugar.Mix very well so that all the sugar dissolves.

Next add almonds &cashews.Mix well

Then add cardamom powder.

Cooks the kheer for 4-5 min more till the vermicelli gets cooked.when the kheer has cooked well it will also thicken &look creamy.switch off the flame & then add raisins.

Serve vermicelli kheer hot, warm or chilled. Garnish with chopped cashews & almond while serving.Do note that on cooling the kheer will thicken.
