Basically this is a simple method. Whisk the cream.

When the cream starts to break down it will go very quickly.

You will end up with rough butter and buttercream.

Now you need lot and lots of cold water. First transfer the rough butter into a bowl of cold water.

Keep kneading the butter in cold water. Replacing the water occasionally. When the water remains clear your butter is ready.

The spatulas are there to cool down so that you can then use them as butter paddles. Place the butter on a side and use the paddles to form a brick.

Wrap the butter in greased proof paper and place in the fridge for later use.
