Wash the rice and keep aside

In the mixer add onions, ginger, garlic, green chillies, tomatoes, coriander and fenugreek leaves with some water and grind into smooth paste.

In a pressure cooker, add oil, put cumin seeds, bay leaves, cinnamon stick let it crackle.

Add the fenugreek paste and cook for 5-7 mins and add all the veggies and cook further till oil separates from the masala.

Add all dry masalas like salt, turmeric, red chilli powder, coriander powder, garam masala and cook for 2 mins.

Add rice, and water 1.5 glass and pressure cook till one whistle. Simmer for another 2-3 mins and off the flame.

Allow the pressure to release on it's own. Open the lid and mix well.

Serve with boondi raita.
