This recipe is super simple and takes just a few minutes. The compote makes a great topping for so many things...cheesecake, ice cream, pancakes, waffles and more.

Wash and hull the strawberries. Slice into halves and if they're on the bigger side, then quarter them. Place them into a pot with the lemon juice and sugar.

Cook over medium heat, stirring often, for 5-10 minutes, until the berries have broken down and become saucy.

Remove the pan from the heat and allow it to cool and thicken slightly before serving. Store in an airtight container in the fridge for a few days.
