Ingredients

  1. 1/4 cupshredded pepperjack cheese
  2. 10eggs
  3. 1/4 cupmilk
  4. 5 slicescooked thick cut bacon, crumbled
  5. 1/4 cupshredded cheddar cheese
  6. 1 tbspMcCormick chipotle & roasted garlic seasoning
  7. salsa, sour cream and chives for serving

    Preheat oven to 350 degrees.

  2. 2

    Place eggs, milk, bacon and seasoning in a blender. Blend for 5 seconds

  3. 3

    Mix the cheese into the egg mixture

  4. 4

    Spoon into two 6-muffin tins or one 12-muffin tin, filling about 3/4 full

  5. 5

    Place muffin tin/s into the oven and cook for about 15 minutes

  6. 6

    Remove from oven, top with a little shredded cheese and let set 3-5 minutes.

  7. 7

    Remove from pan and place two omelet rounds on a bed of salsa. Top with a dollop of sour cream and a sprinkling of chives or parsley

  8. 8

    Work great as a stand alone or serve with toast, potatoes, fruit, or whatever you like

  9. 9
