A truely awesome and quick recipe with optimal use of the leftover rice.. nutritious and tummy filling as contains lots of veggies and a few spices to satisfy our taste buds.. 😊
Steps

Heat a pan, pour oil. Fry the peanuts and keep aside. Add cumin seeds, mustard seeds. Add onion, garlic and ginger.

Add rest veggies and stir fry till they are cooked.

Add spices and cook for a few more min. Add rice and mix properly. Cover and let cook for 5-7 min.

Add coriander and serve with peanuts.
