This is a delicious, hearty one-pot stew, full of flavor and very satisfying. It will keep you full all day!

For the meatballs, mix the ground meat with 2 cloves of garlic, one onion, black pepper, a little salt, 1 egg, breadcrumbs, a splash of white wine, and two basil leaves.

Mix well to form a dough. If it's too soft, add more breadcrumbs; if it's too firm, use less. Shape into balls, coat with flour, fry them, and set aside.

In a pot, heat a splash of olive oil and add one onion, the bell pepper, the remaining 4 cloves of garlic, sliced carrots, and the cleaned, chopped green beans. Sauté everything to make a sofrito. When it's ready, add a splash of crushed tomatoes and cook a little longer until the tomatoes are fried.

Once done, add the bay leaf, a little black pepper, a clove (optional), and the bouillon cube.

Add the potatoes (cut into chunks) and artichokes, pour in one or two cups of white wine, and add the food coloring or saffron. Add the meatballs, and after simmering with the wine for about 8 minutes, cover everything with water.

When the potatoes are tender, your potato and meatball stew is ready. Enjoy!
