Ingredients

4 servings
  • 1 kgMabenda
  • 2large tomatoes
  • 3large onions
  • to tasteSalt
  • 1tablespoonful of Mushereka, traditional bicarbonate of soda
  • Cooking oil

Steps

  1. 1

    Wash the Mabenda. Cut off the heads. Slice them into the size of your choice or like.

    In a heated Sufuria, put the Cooking oil and add the onions. Cook them till soft and add the tomatoes. Cook till they are soft. Add Mabenda.

    Now add the Mushereka, and mix in for 2 minutes before adding 50mls of water and salt, stir and cover. Cover and cook for 10 minutes in medium or low heat of using the gas cooker to avoid them burning or sticking on the sufuria. Note: Mushereka makes them to retain its green colour and also to tenderise them, making soft especially if the Mabenda are very mature.

    They are now ready to be served. I enjoy it with Ugali or with Matoke. Enjoy!
