Pasta Primavera is known as a spring dish, however it can me enjoyed anytime of year. It is so easy to make and versatile. You can use any type of vegetables you may have on hand. One of my favorite dishes.

Ingredients

4 servings
  1. 16 oztaglitelli or bowties pasta
  2. 8asparagus
  3. 2carrots
  4. 8green beans
  5. 1small zucchini
  6. 8 ozheavy cream
  7. 1 tbsp.Butter
  8. 1 tbsp.Olive oil
  9. parsley
  10. Parmigano reggiano cheese
  11. salt and pepper
  12. garlic powder

Cooking Instructions

    Steam vegetables carrots, string beans and asparagus for a few minutes don't overcook. (First steam asparagus separately whole after chopping off woody ends) then put on side in a drainer and run cold water to stop cooking. Do not steam zucchini.

    Then add 1tbs. olive oil to large skillet and saute vegetables over medium heat. In a large pot boil water for pasta. Do not overcook pasta it should be aldente. Add 8oz. heavy cream and butter to pan stirring constantly until well mixed. Add garlic powder and add pasta and cheese, serve immediately. Season with salt and pepper to your liking. Enjoy!
