Groundnut Stew served with Rice and Spinach #authormarathon#

Ground nuts aka Njugu karanga are rich in proteins with their own natural oil. When making a stew with them, one does not need to use cooking oil at all, but only when need be, like in this case, I wanted the fried onions taste in this stew. Note: this is good stew for those who are dieting.

Alternatively, You can blend the tomatoes and onions and the mixed spices. Put in a Sufuria, place on fire and cook them, when it boils you add in your blended (in a dry mill) groundnuts, add salt, and cook till ready.

Ingredients

  • 200 gpan fried and peeled groundnuts, finely blended
  • 2medium size tomatoes
  • 2medium size onions
  • to tasteSalt
  • 1 pinchmixed spices powder or white pepper
  • Some water
  • 1teaspoonful of cooking oul

Steps

    Chop your onions, and tomatoes into small sizes. Put the Sufuria on fire, pour the little oil and add the onions. Fry them for 2 minutes then add the tomatoes. Cook them for 2minutes, add some little water and let them cook till soft and tender. Add salt.

    When you get a puree from the above, add in your groundnuts. Add the mixed spices. Mix while stirring for 2 minutes then add more water to make stew. Cover and cook in low heat for 5 to 7 minutes.

    Depending on what you want to serve the stew with, you now decide the amount of water you want to add or not. The stereo is now ready to be served with an accomplishment of your choice, where it's Matoke, Ugali, Chapati, Rotti or Rice. Enjoy.
