Ingredients

  1. For Paste
  2. 20Almonds
  3. 2 tbspcumin seeds
  4. 1 tspblackpepper
  5. 1 tspDry ginger powder
  6. 2 tbspfennel seeds
  7. 8small cardamom
  8. 2 tbspPoppy seeds
  9. 1 tbspwatermelon seeds
  10. 2Petals of roses
  11. For Sugar syrup
  12. 750 gmssugar
  13. 900 mlwater

    Soak all the ingredients of paste in a big bowl for overnight.

    Make a fine paste of above ingredients and it should be look like this.

    Sugar syrup: Add sugar and water in a vessel,mix it well.As the sugar melts properly add 2 tbsp milk and we can see the scum on the water remove the scum properly.

    Now add paste in the sugar syrup and boil for 20 minutes. Off the gas. Cool it and store in air tight bottle in freeze.

    Add 3 tbsp of syrup and water in a glass. Enjoy this thandai.
