
Madras Dum Biryani

Steps

Cut Onion, tomatoes and green Chilli

Marinate Chicken - add half spoon chilli powder and pinch of salt, one spoon curd, marinate and keep it aside for 1 hr. Soak 1cup rice in water for 10mins.

Keep big size pan and always keep the heat to medium. Pour the oil and let it heat for a minute.

Add green chilli, garam masala and ginger garlic paste

Before it start sticking to bottom, put the onions to fry. Stir occasionally but let the onion to Golden brown colour, then add the leaves

Add tomatoes and Salt, adding salt after tomatoes will soften it

When tomatoes are 50% soften, add chilli and Coriandar powder

Mix and let it cook till the oil comes out separately

Add the Chicken and lemon, keep stirring occasionally to avoid sticking

Once the chicken is 75% cooked, add curd and stir. Then add 2 cups of water

Once the water starting to boil, add the rice and let it cook 10 mins

Check if the rice is 70% cooked, then reduce the heat to low

Take a cotton cloth, rinse in water, seal the pan with cloth and lid so no pressure gets out. Place a big weight pan with water on top of Briyani pan so the pressure stays.

Let it be in Dum for 25 to 30 mins.then switch off and let it cool down for 10mins.
