If you're not a fan of raw celery, neither am I but this soup is delicious! Celery tastes so much better cooked in my opinion. This is a thin but creamy, low calorie soup, great for lunch along with a sandwich. For more creaminess without the coconut cream, just add an extra potato

1large white potato, peeled & chopped
1onion, chopped
4 stickscelery, trimmed and chopped
1000 mlvegetable stock
to tastesalt & pepper
2 tbspcoconut cream

Add the chopped onion, potato, carrot and celery to a saucepan, pour in the hot stock, bring to a boil then turn down and simmer for 30 minutes

Puree smooth, season well with salt and pepper and serve with a swirl of coconut cream on top
