Light Cauliflower and Chicken Soufflé (No Flour, No Sauces)
A low-calorie recipe. Ideally, use low-fat or light cheese. Enjoy without guilt.

Steam the cauliflower until tender. Set aside.

Finely chop the onion and tomatoes. Sauté them, then add the cubed chicken. Season with salt and pepper to taste.

Transfer the cauliflower to a bowl and mash with a fork (it doesn't need to be a puree). Add the nutmeg. Mix in one egg.

Once the chicken, onion, and tomato are cooked, add them to the bowl. Add the other egg and mix all the ingredients together.

Grease a baking dish and spread the mixture evenly. Arrange the mozzarella or low-fat cheese slices on top, then add a slice of tomato over the cheese. Sprinkle with oregano and bake for 15 to 20 minutes.
