Cook the groats in plenty of water for approx 30 mins

Pour matsoun into the pan, break in the eggs, add the salt and flour and mix well

Bring the mixture to boil, then add the cooked and strained groins. It's important that they are both the same temperature (almost boiling).

Add in the boiled water, approximately as much as the matsoun, mix with a wooden spoon.

Boil for 10-15 mins, add the cilantro and onion (if using). Take off from heat and add the butter to melt.

Ready to serve. Remember to use a wooden spoon and not cover with lid whole hot, to prevent separating matsoun and water.
