Ingredients

  • Thandai masala
  • 1 tbspAlmonds
  • 1 tbspCashews
  • 1 tbspPistachios
  • 1 tspFennel seeds
  • 4-5 podsCardamom
  • 1 tbspPoppy seeds
  • 1 tbspDry Rose petals
  • For Shakkarpare
  • 1.5 cupWheat flour
  • 2-3 tbspGhee
  • 1/3 cupMilk
  • 1/4 cupSugar
  • 1/4 tspCardamon powder
  • 1 pinchSalt
  • 1 tbspSesame seeds

Steps

  1. 1

    Take the milk and warm it along with sugar so that the sugar melts. If the milk is hot let it come to warm temp. We do not want hot milk

  2. 2

    Meanwhile grind all the ingredients mentioned for the thandai power.Grind to a smooth paste. rose petals add a nice fragrance

  3. 3

    Take the whole wheat flour and add the salt and the ghee. keep rubbing the ghee till it forms a coarse texture.Add more ghee if coarse texture is not observed.

  4. 4

    Add the Sesame seeds and 2 tbsp of the Thandai masala powder

  5. 5

    Gradually add the warm milk and form a stiff dough

  6. 6

    The dough has to be stiff else the Shakkarpare won't be crunchy and crispy

  7. 7

    Divide the dough and start rolling it.roll it into a big circle but make sure the thickness is 1/4th inche

  8. 8

    Cut into diagonals and fry in hot oil on medium flame.

  9. 9

    Keep turning them so they don't burn. fry till golden brown on all sides
