Ingredients

  • 1 cupMaida or all purpose flour
  • 1/2 cupGhee or clarified butter
  • 1/2 cupstrawberries juice
  • 1/2 cupblueberries juice
  • 1/2 cupkiwi juice
  • 1/2 cuporange juice
  • 1 dropStrawberries essence
  • 1 dropBlueberries essence
  • 1 dropkiwi essence
  • 1 droporange essence
  • 1 cupmawa
  • 1/2 cupSemolina
  • 2 tablespoonsSugar
  • 1 table spoonAlmonds (sliced)
  • 1 cupgrated coconut
  • 1 tablespoonRaisins or kismish
  • 1 table spoonPistachios (chopped)
  • 1 tablespoonCashew (sliced)
  • 1 tablespoonChironji
  • 1 teaspoonGreen Cardamom powder
  • 8-10Kesar or saffron for sugar syrup
  • 2 cupssugar
  • 1 cupwater
  • as requiredOil for deep frying (half of the pan)

Steps

  1. 1

    Make the outer covering of Gujiya
    Pour the ghee over the maida and add half a cup of water to it. Knead a fluffy dough out of this.

    If you want to add colour to your dish then grind strawberries and add juice and 1 drop red strawberries essence for red colour dough then grind a few strands of kesar, orange juice and 1 drop Yellow orange essence colour add it to the dough for yellow colour. For green you can try fine powdered pista. and kiwi juice or 2 drop of green kiwi essence. For blue colour dough grind blueberries add blueberries juice and 1/2 drop Blueberry essence.

    Method of Making Inside Filling :
    In the heavy bottom pan dry roast all crushed dry fruits and with ghee and grated coconut separately on very low flame. After it changes colour keep aside to cool down.

    In the same pan add ghee and roast semolina on low flame till it changes it's colour. Then keep aside to cool down.

    In a big bowl take powdered sugar, add roasted dry fruits coconut and semolina.and grated mawa. Now add nutmeg powder, cardamom powder, and Mix well.
    Gujiya filling is ready to use.

    Now roll out 4/6 flat breads (puris) from the dough and add spoonfuls of the filling to it. Use Gujiya mold or Roll it into halves and seal the edges of the puri with your fingers.

    Heat oil in a deep bottomed pan and when it is piping hot release the gujiyas in it. It will float up while frying on medium low flame and when it is golden brown strain it.

    Take pan add sugar and water and make slightly thik sugar syrup consistency (1 tar chashani) cool than dip quickly out them cool in room temperature.Serve colourful healthy and delicious Gujiyas to celebrate Holi.
