Ingredients

4 servings
  • 1 lbAssorted Mushrooms, chopped
  • 5 TBOnion
  • 1 CloveGarlic, chopped
  • 4 TBButter
  • 2 pintsChicken Stock
  • 1 pintCream
  • Few drops Olive Oil
  • 1 TspParsley, chopped
  • to tasteSalt
  • to tastePepper
  • 2 sprigsThyme

Steps

  1. 1

    Saute onions and garlic in butter. Add mushrooms.

  2. 2

    Add stock and simmer. Season with salt and pepper.

  3. 3

    When mushrooms are cooked, blend in blender and sieve through a Chinois.

  4. 4

    Return the puree to the pan and add cream and a few drops of olive oil.

  5. 5

    Adjust the seasoning and consistency. Serve hot.
