Pork Sausage with Potato, Cherry Tomatoes, and Cheese Sandwich

Peel the potato and cut it into small cubes. Add to a pot of cold salted water and bring to a boil over medium-high heat.

Chop the bacon and onion. Heat a skillet over medium heat. Add 2 tablespoons of olive oil and the bacon, and cook for 2 minutes. Add the onion and season with salt and pepper.

When the potatoes start boiling, add the sausages to the skillet. Simmer the potatoes for 8 minutes, then drain the water.

Add the potatoes to the skillet and mix with the bacon and onion.

Cut the cherry tomatoes in half and add to the skillet. Cook for 1 minute until warmed through. Sprinkle some shredded cheese over the top and let it melt with the potatoes. Serve hot with melty cheese and blackberry chamoy. Enjoy with tortillas or crusty bread. Enjoy.
