I am always seeking convenience , something to cut the kitchen duty in half you know ? So I came across a package of brown rice & quinoa at the grocery store . So naturally I came up with a way to make it a one pot meal #MicrowaveChallenge

I am always seeking convenience , something to cut the kitchen duty in half you know ? So I came across a package of brown rice & quinoa at the grocery store . So naturally I came up with a way to make it a one pot meal #MicrowaveChallenge

In a microwave friendly bowl, mix the Brown rice & quinoa with chopped spinach. Crush half of the curry stock cube and sprinkle over the mixture. Accompany with a few tablespoons of water to help the stock melt properly

Throw into the microwave for about 15 to 20 minutes. Remove from the microwave and allow to to cool a little (not cold)

Cube some blue cheese and smoked salami slices to throw over the meal and serve.
