Ingredients

2 servings
  1. 2 pieces(about 1 lb) Chicken Breast
  2. Sesame Seeds for garnish
  3. Marinade:
  4. 5 tbspTomato Paste
  5. 3 tbspSoy Sauce
  6. 2 tbspSesame Oil
  7. 1 tbspHoney
  8. 1Lime
  9. 1 tspGarlic Powder
  10. 1 tspGround Cumin
  11. 1 piece(about 3/4 inch) Ginger
  12. 1/2 tspBlack Pepper
  13. 1 tspCurry Powder
  14. Salt
  15. Peanut Sauce:
  16. 2 tbspSesame Oil
  17. 2Chili Peppers
  18. 2 clovesGarlic
  19. 3/4 cupPeanuts (about 3 oz)
  20. 1 tbspSugar
  21. 1/4 cupGreek Yogurt
  22. 2 tbspWater

Cooking Instructions

  1. 1

In a bowl, combine tomato paste, soy sauce, honey, sesame oil, and the juice and zest of the lime. Grate the ginger into the mixture.

  2. 2

Add salt, black pepper, garlic powder, ground cumin, and curry powder. Mix well with a whisk.

  3. 3

Cut the chicken breasts, skinless and clean, into long strips. Place them in the bowl with the marinade. Stir until the chicken strips are well coated. Cover with plastic wrap and let rest in the refrigerator for one hour.

  4. 4

Meanwhile, soak the bamboo skewers in water. This is a good trick to prevent them from burning in the oven.

  5. 5

Remove the chicken from the refrigerator and form the skewers with the wooden sticks. Place them on a baking sheet lined with parchment paper. Bake at 400°F until the chicken is well browned, about 20-25 minutes.

  6. 6

While doing this, pour the soy marinade used for the chicken into a pot and bring it to a boil. Once boiling, lower the heat and let it simmer for a few minutes to thicken slightly. The sauce is now ready.

  7. 7

Prepare the peanut sauce. In a pan, fry the chili peppers, garlic, and peanuts with two tablespoons of sesame oil. Add them to a blender, along with sugar, yogurt, and water. Blend well. If it's too thick, you can add more water.

  8. 8

When the satay skewers are ready, serve them on a plate with the two sauces, accompanied by rice.
