This simple oil free version of Katori chaat is very easy to make. The bread is first baked and then it is filled with tangy chatpati chaat and topped with curd, coriander chutney, sev and garnished with coriander leaves.

This simple oil free version of Katori chaat is very easy to make. The bread is first baked and then it is filled with tangy chatpati chaat and topped with curd, coriander chutney, sev and garnished with coriander leaves.
Steps

In a bowl, add curd, sugar and salt to taste. Whisk it nicely and keep aside.

Flatten the breads with a rolling pin till it is flat like a chapati. Take a cookie cutter and cut the flattened bread slices. Keep aside.

Prepare the green chutney and keep aside. See photo below for the recipe of green chutney. The powders are pepper powder, cumin powder and pink salt.

In a steamer, steam the sweet corns and keep aside.

In a bowl, mix together potatoes, corns, onions, tomatoes, chaat masala, half of the coriander chutney, red chilli powder and salt and keep aside.

Take a muffin tray and grease it with little oil. Press the bread rounds in muffin tins till they take cup shape. Coat them with little oil and bake them in pre-heated oven at 190°C for 15 minutes or till the bread cups become brown and crispy.

Once the bread katoris are done keep them aside to cool.

At serving time, fill the bread Katori with the veggie mixture. On top of it, add curd, coriander chutney, chaat masala, sev and coriander leaves.

Serve bread katori chaat immediately.
