Boil the eggs,let them cool,peel the shell and halve

Remove the yolks and set aside also reserve some yolk to garnish.

Boil beetroot until fork tender,peel and finely grate

Prepare the cucumber, avocado n coriader

Mash the avocado with black pepper, grated cucumber, egg yolk,salt,lemon juice and coriader

Fill the mixture into the eggwhites.Top with grated beetroot

Garnish with reserved yolk passed through a mesh strainer

Enjoy as an appetizer
