Baingan bharta is a famous Punjabi dish made from roasted eggplant, onion, garlic-chilli, chopped tomato and other spices.Due to roasting on open flame there is a smoky flavor in the baingan ( eggplant)1
Steps

First roast the eggplants on an open flame on a gas stove top and soak in water immediately so that their charred skin removes easily.

Remove charred skin and mash the roasted eggplants.

Now heat the oil in a pan add jeera when it splatter add garlic, onion, chilli, ginger stir well and cook till onion becomes golden brown.

Then add turmeric powder, coriander powder, chilli powder, garam masala and salt as per taste, stir and cook for a while.

Now add chopped tomatoes and cook until it becomes soft.

When release the oil from them add mashed eggplants, stir and cook for 10-15 minutes on low medium flam.

Garnish with green coriander. Ready to serve hot spicy smoky flavor baingan bharta with any Indian flatbread.
