Ingredients

  • 1Lg baked chicken, deboned
  • 12 ozsmoked pork sausage, sliced
  • 3 c.chicken stock or broth
  • 3med. onion chopped
  • 1 bunchgreen onions sliced
  • 3 T.prepared roux
  • 3bay leaves
  • 2 t.dried parsley
  • 2 t.File'
  • 2 t.Thyme
  • 1 pkg.frozen okra, chopped
  • Salt and pepper

Steps

  1. 1

    In a large pot: Brown Sausage, saute onions.

  2. 2

    Then add all ingredients except roux, green onions, and okra.

  3. 3

    Bring to a boil. Then add cold roux to boiling pot a little at a time.

  4. 4

    At the end, add the okra and green onions.

  5. 5

    Serve over rice.
