Ingredients

6 servings
  • 1 cartonChicken stock
  • 1 cupRaw Sweet Yellow Onion minced
  • 2 poundsSpicy Italian Sausage. (I prefer chicken)
  • 1/4 cupGarlic minced
  • 4 cupsBaby Red Potatoes, washed, and cut to bite sized pieces
  • 3Whole Bay Leaves
  • 1 pintHeavy Cream
  • 4 cupsBaby Spinach leaves
  • 2 pincheschopped Parsley flakes
  • Salt and Pepper
  • 1 TablespoonExtra Virginia Olive oil

Steps

  1. 1

    In large pot saute garlic, and onion in olive oil, until garlic is golden, and onion is translucent. Salt and/or pepper to taste.

  2. 2

    If using sausage links, remove casings, and cut into bite sized pieces. If using ground sausage, crumble into pot, and saute until sausage is browned.

  3. 3

    Add Spinach to pot, and saute until spinach is wilted.

  4. 4

    Add Potatoes, Bay Leaves, Parsley Flakes, and chicken stock to pot. (Add Chicken stock last, and only to the top of the Potatoes.) Bring to a boil uncovered.

  5. 5

    Reduce heat to low, cover, and let simmer until Potatoes are tender. (About 10 min)

  6. 6

    Remove lid, raise heat to medium, remove Bay Leaves, and stir in Cream. Continue to stir until soup is hot.(Do not boil) Remove from heat and serve.
