Steps

Take coconut pieces in a grinder, grind it well and then add water and once again grind it.

Now strain the coconut, throw away the pulp. For 1 cup of normal rice it need 3 cups of coconut water. For basmati rice, the ratio is 1:2 (1 cup rice : 2 cups coconut water)

Take a pan and pour 3 tbsp of ghee, now add all whole Garam masala such as 2 small bay leaves, 2 cloves, 1 green cardamom, 1 Cinnamon stick, 1 star anise, few shajeera, 4 pepper corns, 1 Jaapatri, little nutmeg powder. Saute them well.

Now add green chillies, all veggies (carrots, green beans, onions, tomato, sweet corn, potato, matar) you can add whatever veggies you like.. you can also add cauliflower. And add mint, coriander leaves give it a nice stir.. Add ginger garlic paste and saute it well.

Rinse of the rice. And add to the veggies. And now pour coconut water.

Now add sufficient salt and 1 tbsp Garam masala powder. Cook the palav.

Tasty tasty Coconut Veg palav is ready to serve.
