Gluten-Free, Sugar-Free Waffles

Use ground almonds; I use the leftover pulp from making almond milk.

Be sure to use oat bran, which is not the same as regular oats. Oat bran is the outer layer of the oat grain, left after refining. This part is high in fiber, minerals, vitamins, enzymes, protein, and unsaturated fats.

Place all the ingredients in a blender and blend until well combined. Coconut oil helps prevent the waffles from sticking, but you can also brush it directly onto the waffle maker.

Pour the batter into the waffle maker and cook until the waffles are golden brown.

Serve with fruit, sugar-free syrup, sugar-free dulce de leche, sugar-free jam, or your favorite topping. Enjoy!
