Orange Yogurt Cake
This is a family recipe—my cousin, a talented pastry chef, taught it to me. I hope you enjoy it as much as we do!
Steps
- 1
Empty the yogurt into a bowl and set the container aside to use as a measuring cup. Preheat the oven to 350°F (180°C) while you prepare the batter. Grate the orange zest, being careful not to include the white part, and set aside. In a large bowl, add the orange segments (cut into pieces), sugar, oil, orange zest, yogurt, and eggs. Beat until well combined.
- 2
Sift the flour and baking powder together, then add to the mixture and beat again. Choose a baking pan about 8 inches (20 cm) in diameter, grease it with butter, and pour in the batter. Bake on the middle rack at 350°F (180°C) for 35 minutes with the fan on if using a round pan. If using a rectangular pan, bake for 5 to 10 minutes longer, as it will take more time to cook through. Test with a toothpick—if it comes out clean, the cake is done.
- 3
Let the cake cool for 1 hour before removing from the pan. Enjoy!
