Ingredients

2 servings
  1. (For making dhokla)
  2. 200 g (2 cups)besan-
  3. to tastesalt
  4. 1/2 tspsugar-
  5. 1/2 tspgreen chilli paste
  6. 1 tspginger paste-
  7. 2 tbsplemon juice
  8. 3/4 tspbaking soda/ eno-
  9. (for tadka)
  10. 1 tbspoil-
  11. 1/2 tspmustard seeds-
  12. 2-3green chilli
  13. 1 tspsugar-
  14. 1 tbspcurry leaves
  15. 1 tbspgrated coconut
  16. 1 tbspcoriander leaves (chopped)
  17. For tamarind dip
  18. 2 tbsptamarind
  19. 1/2 bowlwater
  20. 3-4 clovesgarlic
  21. 1green chilli (chopped)
  22. 1/2 tspcrushed ginger
  23. 1 tspjaggery (to your taste)
  24. as neededwater (if needed,depends on the consistency of chutney you want)

Steps

    Put some water in a steamer to boil.

  2. 2

    Mix all the ingredients in a bowl(to make dhokla) except the eno/baking soda and leave it for 10min. Don't make the batter thin, or else the dhokla won't be spongy.

  3. 3

    Then, add baking soda to it and mix it well. Don't stir the batter more, or else it will become thin and dhokla won't come out spongy.

    Add 1tsp oil to the mixture.

  5. 5

    Put the mixture in the steamer and let it steam for 20min in medium flame.

  6. 6

    Cut the dhokla into pieces once it is cooked.

  7. 7

    (for tadka) Heat oil in a pan. Add mustard seeds,curry leaves and then, green chilli to it.

  8. 8

    Now, add 1/2cup water. Add sugar and salt to it and let it boil.

  9. 9

    Pour the water over the dhokla pieces and spread it. Garnish dhokla with freshly chopped coriander leaves & grated coconut.

    Serve hot with green chutney, or tamarind chutney.

    For tamarind dip,soak the tamarind in water for 10-15min. Then,add crushed garlic-ginger, green chilli & jaggery to it. Mix it well. Add more jagger& water if you want. It's ready to serve.
