Melt the butter in the microwave and set aside.

Mix together flour, sugar, salt and baking powder in a bowl.

Add the egg to milk and beat well. Now add butter and vanilla essence. Mix everything well.

Make a well in the centre of the flour bowl. Add in the wet ingredients and whisk with the help of a balloon whisk just until combined. It will be slightly thick and lumpy but should be well combined. Rest the batter for 15 minutes.

Heat a non stick pan to medium high heat. Slightly brush it with oil or butter. Pour a ladle full of batter in the pan. Cook approximately for 2 to 4 minutes. Once you see bubbles bursting on top and the batter surface seems to lose it's shine flip it over and cook for another 2 to 3 minutes. Serve with cream and maple syrup or honey.
