Ratatouille

Ratatouille, which might remind us of animated movies, is a very typical dish from France.
In Spain, we have something similar called escalivada.
The main difference is that ratatouille includes grated or crushed tomatoes and Provençal herbs. Otherwise, it's quite similar.
In this case, I've arranged it this way, although you can also make it with thinly sliced pieces without much fuss.
Still, if you have kids at home who aren't fond of vegetables, they'll eat them much better this way. A good presentation always attracts the little ones.

Wash and grate the tomato into the bottom of the baking dish you will use for the oven.

Peel and wash the carrot and asparagus using a vegetable peeler. Wash the zucchini and eggplant. Also, peel the onion and cut it horizontally to get onion rings about 1 1/4 inches thick.

Using the vegetable peeler, make strips with the vegetables. For the zucchini and eggplant, cut them lengthwise into four pieces to make strips of the same thickness.

Place the strips in the baking dish, alternating colors. When finished, sprinkle with salt, olive oil, and the chosen spices. In this case, I chose oregano, sage, and thyme, but you can use Provençal herbs or any other mix.

Place in a preheated oven at 400°F (200°C) for about an hour. Serve hot, accompanying a meat or fish dish, or simply as a main dish. Enjoy.
