Ingredients

  • 7 tablespoonssoftened unsalted butter (about 100 grams)
  • 1/2 cuppowdered sugar (about 65 grams)
  • 1large egg (about 45 grams)
  • 3 tablespoonsalmond flour (about 25 grams)
  • 1 2/3 cupscake flour (about 200 grams)
  • 3 1/2 ouncesdark chocolate (about 100 grams)
  • 1/2 cupheavy cream (about 100 grams)
  • 2 tablespoonsunsalted butter (about 10 grams)

Steps

    Tart Crust: Soften the butter at room temperature, then beat with a whisk until soft.

    Add powdered sugar and mix until it forms a thick paste.

    Mix in the almond flour until combined.

    Add the egg in three parts, mixing until fully incorporated each time to prevent separation.

    Add the flour and use a spatula to fold until no dry flour is visible.

    Shape into a square, place in a bag, and refrigerate for 1 to 2 hours.

    Divide into 10-12 gram portions and roll into small balls.

    Bake in the oven until golden brown. Cool on a wire rack and prepare the filling.

    Filling: Heat the dark chocolate, heavy cream, and unsalted butter in a pot, stirring until completely melted.

    Pour the filling into the tart shells and sprinkle with sliced almonds to finish.
