Idda is a famous Gujarati snack especially made in summer as lots of mangoes available. It goes well with aammras. One should also enjoy with green chutney and raw oil.
Idda is also known as white dhokla. Both are made from rice and urad dal. Only difference is that idda is made thin and simple (without tempering).

Idda is also known as white dhokla. Both are made from rice and urad dal. Only difference is that idda is made thin and simple (without tempering).
Steps

Soak urad dal and rice in water for 6-8 hours. Then grind in mixer grinder with curd and enough water and make slightly thick batter. Add salt and allow it to ferment for 8-10 hours.

After fermentation add crushed green chillies and mix well.

Boil enough water in dhokla maker or steamer. Grease dhokla thali with oil. Now add oil and sodabicarb into batter and rotate in one direction and mix well. Pour enough batter into greased thali (keep thin layer). Sprinkle red chilli powder or black pepper powder and steam for 12-15 minutes or until done. Then cut into pieces in desired shape and enjoy hot with aamras, green chutney or oil.

If you want to make white dhokla, temper with oil, mustard seeds, sesame seeds and curry leaves.
