Ingredients

  1. 9 inchbaked pie shell
  2. Pie ingredients
  3. 3 tablespoonssugar
  4. 5 tablespoonsflour
  5. 1/4 teaspoonsalt
  6. 2 cupsmilk
  7. 2egg yolks slightly beaten
  8. 2 cupscoconut
  9. 1 1/2 teaspoonsvanilla extract
  10. 1 tablespoonbutter
  11. Meringue ingredients
  12. 3egg whites
  13. 3 teaspoonssugar

Cooking Instructions

  1. 1

    Bake 9" pie shell as directed.

    In top of double boiler combine sugar, flour and salt.

  3. 3

    Add milk, and egg yolks. Stir until smooth.

  4. 4

    Add 1 cup coconut.

  5. 5

    Cook over boiling water 5 minutes or until thick. Cover reduce heat cook 10 more minutes. Remove from heat

    Add vanilla and butter. Stir.

  7. 7

    Cool slightly, pour into baked pie shell.

  8. 8

    Make meringue by beating 3 egg whites until stiff, add 3 teaspoons sugar 1 teaspoon at a time and beat well after each teaspoon is added.

    Top filling with meringue and sprinkle with coconut.

  10. 10

    Bake 15 minutes at 350 degrees.

Luv this recipe! Thanks for posting. I made this years ago and we loved it. Just made it again tonight and I see 2cups coconut in the ingredient list and 1cup in the recipe...which way to go with this? Thanks!
