
Strawberry mousse cake

Strawberry is in season! This recipe is for a 6" round springform pan.
Cooking Instructions

Making crust - put golden Oreos in food processor and break them up, then add melted butter and mix well.

Making strawberry mousse. Rinse and drain the strawberries. Pick out 5-6 that looks good to place on top for garnish later. Hull the berries, place them in blender,and add sugar to blend smooth. Strain thru a sieve and set aside.

Place parchment paper at the bottom of the springform pan. Pour crust mix in and press flat with a spoon. Chill in refrigerator for 20 minutes.

Bloom the gelatin in 45ml water. This takes a few minutes. Heat up the strawberry mixture in microwave for about 40 seconds or until warm. Mix in the gelatin and stir until gelatin melts, and then place the bowl of strawberry/gelatin mixture in another bowl with ice water, mix until cools.

Whip the heavy cream until it can hold shape, then carefully mix in whipped cream. Pour the mixture into cake pan and refrigerate for about 4 hours or until set.

Cut the strawberries to your liking for decoration, be creative!! Dissolve the strawberry Jell-O in 1/4 cup of boiling water, and then stir in 1/4 cup of ice/water mixture to cool it down. Pour on top of the cake.
