Ingredients

  1. 250 grrice noodles
  2. 2eggs - lightly beaten
  3. 2 cupsspinach
  4. 1spring onion - cut in diagonal
  5. 1carrot - cubed
  6. 1 tbspoyster sauce
  7. 1-3 tbspkecap manis
  8. 1 tspsesame oil (optional)
  9. 1 tspsoy sauce
  10. 2 tspsalt
  11. 1.5 tspground pepper
  12. 1.5 tspminced garlic
  13. Left over chicken rotisserie etc

Steps

  1. 1

    Cook rice noodles as per instructions. Rinse with cold water and cut using scissors. Mix with left over (shredded) chicken and spinach. Set aside.

  2. 2

    Mix all spice except minced garlic then put the cooked rice noodles. Mix well.

  3. 3

    Cut up spring onion, carrot, green beans (if using), shiitake mushrooms (if using), any kind veggies. Set aside.

  4. 4

    In a frypan with a bit of cooking oil, cook eggs until a bit firm.

  5. 5

    Put all the cut up veggies from step 3 as well as garlic and cook lightly.

  6. 6

    Put all the noodles mix from step 2. Cook through and taste it.

  7. 7

    Serve with sambal and prawn crackers.
