Ingredients

  1. 1 PacketGingernut Biscuits
  2. 300 mlsCream
  3. 1 TablespoonIcing Sugar
  4. 1 glassorange juice

Steps

    In a large mixing bowl add the cream and icing sugar and whisk with electric whisker.

    Whisk until soft peaks have formed.
    Mix for a few seconds more until you have stiff peaks. Leave it aside.

    Prepare your juice for dunking the biscuits in a shallow bowl.
    Take your serving plate and ensure it is long enough to hold the packet of biscuits and a few inches either end.

    Smear some cream across the plate this helps hold the biscuits in place and forms a base.

    Take the first biscuit and dunk it briefly in the orange juice then smear one side with cream and place it vertically on the plate.

    Take the second biscuit, dunk it briefly in the juice smear one side with cream and place it up against the first biscuit.
    Repeat until all the biscuits are used up and form a straight line.

    Take the remaining cream and gently smear all over the top and sides of the log, smoothing as best you can.
    With the remaining cream add red colour and mix. Put the cream in the piping bag and decorate

  8. 8

    Chill the cream covered log overnight to allow the biscuits to soften before serving.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.
