Millet is rich in fiber, gluten free and has protein, vitamin and minerals. It offers protection against heart diseases, cancer and diebetes so we must include this in our diet.
Traditionally paniyaram is made with Dosa batter but I have given it a healthy twist and added little millets in it.
These paniyarams are easy to make and healthy.

Ingredients

15-20 minutes
3-4people
  1. 1 cuprice
  2. 1/4 cuplittle millets
  3. 1/4 cupmoong daal
  4. to tasteSalt
  5. 2 tbspOil
  6. 1/2 cupChopped onion
  7. 1/4 cupgrated carrot
  8. 2green chilli
  9. 1small piece of ginger
  10. 1/4 cupchopped capsicum
  11. 1 spriggreen coriander finely chopped
  12. 1/2 tbspMustard seeds
  13. 5-6curry leaves
  14. 1 tbspEno(optional) I didn't use it

Steps

15-20 minutes
  1. 1

    Wash and soak rice, little millets and moong daal overnight.

  2. 2

    Grind them with green chilli and ginger. Prepare a smooth batter.

  3. 3

    Add salt, All the chopped vegetables- onion, capsicum, carrot and green coriander and Eno to it. Mix properly.

  4. 4

    Now heat 1 tbsp oil in a small pan. Put mustard seeds in it,let them crackle, now add curry leaves. Stir and pour in the batter.

  5. 5

    Grease appe pan(a special pan to make appe). Pour batter in each cavity and cover with the lid.

  6. 6

    Cook them from both sides till golden brown and crisp.

  7. 7

    Millet,rice and daal PANIYARAMS are ready.

  8. 8

    Serve these cut, fluffy and delicious paniyarams with coconut chutney. You can use tomato chutney or mint chutney too but it tastes best with coconut chutney.
