Curried rice, shredded beef and green pepper with coleslaw

Parboil rice. Rinse drain and keep aside. Add vegetable oil in a pan stir fry liver with onions. Add Curry powder, salt and seasoning. Pour in your rice. Add your carrots and just enough water to cook your rice. Taste and correct seasoning. Cover and allow to simmer gently till cooked.

Slice your beef thinly against the grain. Marinade with spices of your choice. Toss in corn flour till well coated. Allow to rest for some time.

Heat vegetable oil in a pan. Add your coated beef and stir fry till tender. Julienne your green pepper and onion. Add the onion and green pepper to your beef. Add soy sauce and spices to taste. U can add a little stock or water and allow to cook till beef is tender and liquid is absorbed.

Cut cabbage thinly and grate carrots. Wash, drain and combine them with mayonnaise.

Serve your rice, shredded beef alongside coleslaw
